5-Ingredient Avocado Noodles for Kids

Ingredients
  

  • 8 oz Penne or rotini pasta Or any shape suitable for little hands
  • 1 whole Ripe avocado Pitted and peeled
  • 1 cup Fresh spinach Washed and packed
  • 1 tbsp Olive oil Extra virgin preferred
  • 1 tbsp Lemon juice Freshly squeezed
  • 2 tbsp Parmesan cheese Grated
  • 1/4 cup Pasta water Reserved from boiling pasta, use as needed
  • 1/2 cup Fresh mozzarella pearls For serving

Instructions
 

  • Boil a pot of water and cook pasta according to package directions. Reserve 1/4 cup of pasta water before draining.
  • In a food processor or blender, combine the avocado, spinach, olive oil, lemon juice, and Parmesan cheese.
  • Blend until smooth, adding reserved pasta water one tablespoon at a time to reach the desired consistency.
  • Toss the cooked pasta with the avocado sauce until evenly coated.
  • Serve warm or cold, topped with fresh mozzarella pearls and a side of steamed broccoli, carrots, and fresh berries.
