Reserved from boiling pasta, use as needed

Instructions
Boil a pot of water and cook pasta according to package directions. Reserve 1/4 cup of pasta water before draining.
In a food processor or blender, combine the avocado, spinach, olive oil, lemon juice, and Parmesan cheese.
Blend until smooth, adding reserved pasta water one tablespoon at a time to reach the desired consistency.
Toss the cooked pasta with the avocado sauce until evenly coated.
Serve warm or cold, topped with fresh mozzarella pearls and a side of steamed broccoli, carrots, and fresh berries.
