Air-Fried Peanut Butter Chicken Bites

Ingredients
  

  • 1 lb Chicken breast Boneless, skinless, cut into 1-inch cubes
  • 1/4 cup Peanut butter Creamy, unsweetened
  • 2 tbsp Soy sauce Low sodium
  • 1 tbsp Lime juice Freshly squeezed
  • 1 tsp Garlic powder
  • 1 tsp Ginger Freshly grated
  • 2 tbsp Peanuts Crushed, for garnish
  • 1/4 cup Cilantro Roughly chopped, for garnish

Instructions
 

  • In a medium bowl, whisk together peanut butter, soy sauce, lime juice, garlic powder, and grated ginger until smooth.
  • Toss the cubed chicken in the peanut sauce until fully coated. Let marinate for at least 15 minutes at room temperature.
  • Preheat the air fryer to 375°F (190°C) for 3 minutes.
  • Arrange the marinated chicken in a single layer in the air fryer basket, ensuring pieces do not overlap.
  • Cook for 10-12 minutes, shaking the basket halfway through, until the chicken reaches an internal temperature of 165°F and the edges are lightly charred.
  • Garnish with crushed peanuts and chopped cilantro before serving.
