Amalfi Lemon & Beef Crostini

Ingredients
  

  • 1 loaf Baguette Sliced into 1/2-inch thick pieces
  • 1 cup Ricotta cheese Whole milk preferred
  • 1 Lemon Zested and juiced
  • 6 oz Thinly sliced roast beef Or Bresaola
  • 3 tbsp Olive oil Extra virgin, divided
  • 0.25 cup Fresh basil Finely chopped
  • 1 tsp Black pepper Freshly ground

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Brush the baguette slices with 2 tablespoons of olive oil and place them on a baking sheet.
  • Toast in the oven for 5 minutes until golden brown and crispy, then let them cool slightly.
  • In a small bowl, mix the ricotta cheese with the lemon zest, half the lemon juice, and black pepper.
  • Spread a generous layer of the lemon ricotta mixture onto each toasted baguette slice.
  • Top each crostini with a folded slice of beef.
  • Drizzle with the remaining 1 tablespoon of olive oil, the rest of the lemon juice, and garnish with fresh chopped basil before serving.
