Soak wooden skewers in water for 30 minutes if using to prevent burning on the grill.

In a large mixing bowl, combine the ground beef, grated onion, minced garlic, chopped parsley, mint, cumin, coriander, cinnamon, salt, and pepper. Mix until just combined.
Divide the seasoned meat into equal portions. Press and mold each portion around a skewer to form a long sausage shape.
Preheat your grill or grill pan to medium-high heat. Lightly oil the grates.
Grill the kebabs for 8 to 10 minutes, turning occasionally, until they are browned on all sides and cooked through.
Serve warm with tzatziki sauce, and garnish with pomegranate seeds and fresh lemon wedges.
