Ingredients
  

  • 1.5 lbs Chicken breasts or thighs Boneless, skinless, cut into bite-sized pieces
  • 3 tbsp Red curry sauce Or red curry paste, adjust to desired spice level
  • 1 can Coconut milk Full fat, 13.5 oz
  • 1 whole Red bell pepper Sliced into thin strips
  • 2 stalks Green onions Thinly sliced
  • 1/4 cup Cilantro Freshly chopped for garnish
  • 1 tbsp Cooking oil Vegetable or coconut oil

Instructions
 

  • Heat the cooking oil in a large skillet or heavy-bottomed pot over medium-high heat.
  • Add the bite-sized chicken pieces to the skillet and sauté for 5-7 minutes until lightly browned on all sides.
  • Stir in the red curry sauce, ensuring the chicken is evenly coated, and cook for 1-2 minutes until highly fragrant.
  • Pour the coconut milk into the pot, stirring well to combine with the curry sauce, then add the sliced red bell pepper.
  • Bring the mixture to a gentle boil, then immediately reduce the heat to low, cover, and let simmer for 15 minutes.
  • Remove the curry from the heat and stir in the sliced green onions and fresh chopped cilantro.
  • Serve warm over a bed of steamed rice or alongside fresh naan bread.
