Instructions
Heat the cooking oil in a large skillet or heavy-bottomed pot over medium-high heat.
Add the bite-sized chicken pieces to the skillet and sauté for 5-7 minutes until lightly browned on all sides.
Stir in the red curry sauce, ensuring the chicken is evenly coated, and cook for 1-2 minutes until highly fragrant.
Pour the coconut milk into the pot, stirring well to combine with the curry sauce, then add the sliced red bell pepper.
Bring the mixture to a gentle boil, then immediately reduce the heat to low, cover, and let simmer for 15 minutes.
Remove the curry from the heat and stir in the sliced green onions and fresh chopped cilantro.
Serve warm over a bed of steamed rice or alongside fresh naan bread.
