Avocado Corn Salad

Ingredients
  

  • 3 cups Sweet corn kernels Cut fresh from the cob, or use thawed frozen corn
  • 2 whole Ripe avocados Pitted, peeled, and diced
  • 1.5 cups Cherry tomatoes Halved
  • 1/4 cup Red onion Finely diced
  • 1/4 cup Fresh cilantro Finely chopped
  • 3 tbsp Fresh lime juice Juice of 1 to 2 limes
  • 2 tbsp Extra-virgin olive oil
  • 1/2 tsp Sea salt Or to taste
  • 1/4 tsp Black pepper Freshly cracked

Instructions
 

  • In a large serving bowl, combine the sweet corn kernels, diced avocados, halved cherry tomatoes, diced red onion, and chopped cilantro.
  • In a separate small jar or bowl, whisk together the fresh lime juice, extra-virgin olive oil, sea salt, and black pepper.
  • Pour the lime dressing over the salad ingredients.
  • Toss the salad gently to evenly distribute the dressing and ingredients, being careful not to mash the avocado pieces.
  • Serve immediately at room temperature, or cover tightly and chill in the refrigerator for up to 2 hours before serving.
