Baked Garlic Lemon Pepper Chicken

Ingredients
  

  • 4 pieces Boneless skinless chicken breasts Pounded to even thickness
  • 2 tbsp Olive oil Extra virgin
  • 1 whole Lemon Half juiced, half sliced
  • 1 tsp Garlic powder Can substitute with 2 cloves minced fresh garlic
  • 1 tbsp Lemon pepper seasoning Salt-free preferred if adding extra salt
  • 0.5 tsp Salt Adjust to taste
  • 0.5 tsp Black pepper Freshly cracked
  • 1 tbsp Fresh parsley Finely chopped

Instructions
 

  • Preheat oven to 400°F (200°C) and lightly grease a 9x13 inch baking dish.
  • Place the chicken breasts in the prepared baking dish. Drizzle the olive oil and fresh lemon juice evenly over the top of the chicken.
  • In a small bowl, whisk together the lemon pepper seasoning, garlic powder, salt, and black pepper.
  • Sprinkle the seasoning mixture evenly over both sides of the chicken breasts.
  • Arrange the lemon slices on top of and around the chicken in the baking dish.
  • Bake uncovered for 20 to 25 minutes, or until the internal temperature of the thickest part of the chicken reaches 165°F (74°C).
  • Remove from the oven and let the chicken rest for 5 minutes before slicing. Garnish with chopped fresh parsley and serve warm.
