Roll each tortilla tightly, pressing gently to seal the edges.
Wrap the rolled tortillas in plastic wrap and chill in the refrigerator for at least 30 minutes to firm up.
Remove the plastic wrap and slice each roll into 1-inch thick pinwheels using a serrated knife. Serve cold.
