Easy Slow Cooker Jambalaya with Beef and Shrimp

Beef and Shrimp Crockpot Creole Stew

Ingredients
  

  • 14 oz Beef smoked sausage sliced into rounds
  • 1 lb Medium shrimp peeled and deveined
  • 1.5 cups Long grain white rice uncooked
  • 1 whole Red bell pepper diced
  • 1 whole Green bell pepper diced
  • 1 whole Yellow bell pepper diced
  • 1 cup White onion chopped
  • 1 cup Celery chopped
  • 1 tbsp Garlic minced
  • 15 oz Tomato sauce canned
  • 14.5 oz Diced tomatoes canned, undrained
  • 2 cups Beef broth low sodium
  • 2 tbsp Cajun seasoning adjust to taste
  • 2 tbsp Fresh parsley chopped for garnish

Instructions
 

  • Add beef sausage, red bell pepper, green bell pepper, yellow bell pepper, white onion, celery, garlic, tomato sauce, diced tomatoes, beef broth, and Cajun seasoning to the crockpot.
  • Stir well to combine all ingredients. Cover and cook on LOW for 6 to 8 hours or HIGH for 3 to 4 hours.
  • About 30 minutes before serving, open the lid and stir in the uncooked white rice and shrimp.
  • Cover and cook for the remaining 30 minutes, or until the rice is tender and the shrimp is pink and cooked through.
  • Garnish with chopped fresh parsley before serving hot.
