Instructions
In a medium bowl, combine the diced mango, red bell pepper, red onion, cilantro, jalapeno, and 1 tbsp of lime juice. Set aside to let the flavors meld.
Rub the fillets evenly with the blackened seasoning.
Heat a lightly oiled skillet over medium-high heat. Sear the fillets for 3 to 4 minutes per side, until fully cooked and flaky. Remove from heat and gently flake with a fork.
Warm the corn tortillas in a dry skillet or microwave.
Assemble by layering shredded cabbage, flaked fish, mango salsa, and a drizzle of the creamy sauce on each tortilla. Serve immediately.
