Blackened Seafood Wraps with Fresh Mango Salsa

Ingredients
  

  • 1.5 lbs Firm white fish fillets Cod or mahi mahi, pat dry before seasoning
  • 2 tbsp Blackened seasoning Store-bought or homemade
  • 8 count Corn tortillas Warmed
  • 2 cups Shredded cabbage Green or red
  • 1 cup Ripe mango Peeled and diced
  • 0.5 cup Red bell pepper Finely diced
  • 0.25 cup Red onion Finely diced
  • 0.25 cup Fresh cilantro Chopped
  • 1 count Jalapeno Minced, seeds removed for less heat
  • 2 tbsp Fresh lime juice Divided
  • 0.5 cup Creamy taco sauce Sour cream or yogurt based

Instructions
 

  • In a medium bowl, combine the diced mango, red bell pepper, red onion, cilantro, jalapeno, and 1 tbsp of lime juice. Set aside to let the flavors meld.
  • Rub the fillets evenly with the blackened seasoning.
  • Heat a lightly oiled skillet over medium-high heat. Sear the fillets for 3 to 4 minutes per side, until fully cooked and flaky. Remove from heat and gently flake with a fork.
  • Warm the corn tortillas in a dry skillet or microwave.
  • Assemble by layering shredded cabbage, flaked fish, mango salsa, and a drizzle of the creamy sauce on each tortilla. Serve immediately.
