Cheesy Beef Kielbasa Pierogi Casserole

Ingredients
  

  • 2 lbs frozen pierogies Potato and cheddar or onion flavor, do not thaw
  • 1 lb beef kielbasa Sliced into 1/2 inch rounds
  • 1 block cream cheese 8 oz, softened and cubed
  • 2 cups chicken broth Low sodium preferred
  • 2 cups sharp cheddar cheese Shredded, divided
  • 1/2 tsp black pepper Freshly ground
  • 3 stalks green onions Thinly sliced, for garnish

Instructions
 

  • Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish with non-stick spray.
  • Arrange the frozen pierogies and sliced beef kielbasa evenly in the prepared baking dish.
  • In a medium bowl, whisk together the softened cream cheese cubes, chicken broth, and black pepper until mostly smooth (small lumps of cream cheese are fine). Stir in 1 cup of the shredded cheddar cheese.
  • Pour the creamy broth mixture evenly over the pierogies and sausage. Cover the dish tightly with aluminum foil.
  • Bake for 30 minutes. Remove the foil and sprinkle the remaining 1 cup of cheddar cheese over the top.
  • Bake uncovered for another 10-15 minutes, or until the cheese is melted and bubbly and the pierogies are tender.
  • Garnish with sliced green onions before serving warm.
