Ingredients
  

  • 2 large English Cucumbers Thinly sliced
  • 0.5 cup Red Onion Thinly sliced
  • 2 tbsp Fresh Dill Finely chopped
  • 0.5 cup Sour Cream Can substitute with full-fat Greek yogurt
  • 0.25 cup Mayonnaise Use high-quality mayo
  • 1 tbsp White Vinegar Apple cider vinegar also works
  • 1 tsp Granulated Sugar For balancing acidity
  • 1.5 tsp Salt Divided (1 tsp for sweating cucumbers, 0.5 tsp for dressing)
  • 0.5 tsp Black Pepper Freshly cracked

Instructions
 

  • Thinly slice the cucumbers and red onions. Place the cucumber slices in a colander set over a bowl.
  • Toss the cucumbers with 1 teaspoon of salt and let them sit for 30 minutes to draw out excess moisture. Pat dry thoroughly with paper towels.
  • In a large mixing bowl, whisk together the sour cream, mayonnaise, white vinegar, sugar, the remaining 0.5 teaspoon of salt, black pepper, and fresh dill.
  • Add the dried cucumbers and sliced red onions to the dressing. Toss gently until all vegetables are evenly coated.
  • Cover the bowl and chill in the refrigerator for at least 1 hour before serving to allow the flavors to meld.
