Preheat oven to 400°F (200°C).
Wash and dry the potatoes. Pierce each potato multiple times with a fork.
Rub the potatoes evenly with olive oil and sprinkle with kosher salt.
Place potatoes directly on the middle oven rack. Bake for 45 to 60 minutes, or until the skin is crisp and the center is easily pierced with a fork.
While the potatoes bake, cook the beef bacon in a skillet over medium heat until crispy. Drain on a paper towel.
Remove baked potatoes from the oven. Carefully slice them open lengthwise.
Fluff the interior with a fork. Add 1 tablespoon of butter to each potato.
Divide the shredded cheddar cheese, crispy beef bacon, and sour cream evenly among the potatoes.
Garnish with sliced green onions and black pepper. Serve hot.
