Yukon gold potatoes
peeled and cut into 1-inch cubes

Mayonnaise
full fat preferred

Yellow mustard

Apple cider vinegar

Sweet pickle relish

Hard-boiled eggs
shelled and chopped

Celery
finely diced

finely diced or grated

Instructions
Place the potatoes in a large pot and cover with water by 1 to 2 inches. Bring to a boil and cook for 15 minutes or until fork tender.
Drain the potatoes in a colander and let them cool for 15 minutes.
Add the mayonnaise, mustard, vinegar, sweet relish, salt, and pepper in a large mixing bowl and whisk to combine.
Stir in the diced celery, onion, cooled potatoes, and chopped hard-boiled eggs. Fold gently until well combined.
Cover and refrigerate for at least 1 hour. Garnish with paprika and chopped green onions before serving.
