Classic Southern Potato Salad

Ingredients
  

  • 3 lbs Yukon gold potatoes peeled and cut into 1-inch cubes
  • 1 cup Mayonnaise full fat preferred
  • 2 tbsp Yellow mustard
  • 1 tbsp Apple cider vinegar
  • 1/4 cup Sweet pickle relish
  • 3 Hard-boiled eggs shelled and chopped
  • 2 stalks Celery finely diced
  • 1/4 cup Sweet yellow onion finely diced or grated
  • 2 tbsp Green onions chopped, for garnish
  • 1 tsp Paprika for garnish
  • 1 tsp Salt
  • 1/2 tsp Black pepper

Instructions
 

  • Place the potatoes in a large pot and cover with water by 1 to 2 inches. Bring to a boil and cook for 15 minutes or until fork tender.
  • Drain the potatoes in a colander and let them cool for 15 minutes.
  • Add the mayonnaise, mustard, vinegar, sweet relish, salt, and pepper in a large mixing bowl and whisk to combine.
  • Stir in the diced celery, onion, cooled potatoes, and chopped hard-boiled eggs. Fold gently until well combined.
  • Cover and refrigerate for at least 1 hour. Garnish with paprika and chopped green onions before serving.
