Cold Beef Salami & Cheese Tortellini Recipe

Ingredients
  

  • 16 oz Cheese Tortellini uncooked
  • 4 oz Beef Salami sliced and quartered
  • 1 cup Cherry Tomatoes halved
  • 1 cup Cucumber sliced
  • 1/2 cup Black Olives sliced
  • 2 cups Spinach Leaves roughly chopped
  • 1/2 cup Crumbled Cheese feta or goat cheese
  • 1/2 cup Italian Dressing tangy
  • 1 tsp Dried Herbs Italian blend

Instructions
 

  • Cook the tortellini according to package directions in salted boiling water. Drain and rinse under cold water to cool.
  • In a large mixing bowl, combine the cooled pasta, beef salami, cherry tomatoes, cucumber, black olives, and spinach.
  • Pour the dressing over the mixture and sprinkle with dried herbs. Toss gently to coat all ingredients evenly.
  • Fold in the crumbled cheese carefully to avoid mashing it.
  • Cover and refrigerate for at least 30 minutes before serving.
