Reduce the heat and let the sauce simmer for 3 to 5 minutes until it thickens to your desired consistency. Season heavily with black pepper and salt to taste.
To serve, split the warm biscuits in half and place them on plates. Ladle the hot meat sauce generously over the top and garnish with fresh chives.
