Instructions
Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat.
Add the thinly sliced beef and fry until very crispy and browned. Remove from wok and set aside.
In the same wok, add the diced chicken thighs and cook until browned and cooked through, about 5 to 7 minutes. Set aside with the beef.
Add the remaining tablespoon of oil to the wok. Sauté the onions and carrots until softened, about 3 to 4 minutes.
Stir in the peas and cooked rice, breaking up any clumps of rice with a spatula.
Pour the BBQ sauce and soy sauce over the rice, tossing constantly to ensure an even coating.
Return the cooked chicken and crispy beef bits to the wok. Toss everything together for another 2 minutes until fully heated through.
Garnish with sliced scallions and serve immediately.
