Easy BBQ Chicken Rice Recipe with Crispy Beef

Cozy BBQ Chicken Rice

Ingredients
  

  • 1 lb Chicken thighs, diced Boneless and skinless
  • 0.5 lb Beef sirloin, thinly sliced For crispy beef bits
  • 3 cups Cooked white rice Day-old is best for stir-frying
  • 0.5 cup Peas Frozen or fresh
  • 0.5 cup Carrots Diced finely
  • 0.5 cup Yellow onion Chopped
  • 0.25 cup Scallions Thinly sliced
  • 0.33 cup BBQ sauce Your favorite brand
  • 2 tbsp Soy sauce Low sodium preferred
  • 2 tbsp Vegetable oil Divided use

Instructions
 

  • Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat.
  • Add the thinly sliced beef and fry until very crispy and browned. Remove from wok and set aside.
  • In the same wok, add the diced chicken thighs and cook until browned and cooked through, about 5 to 7 minutes. Set aside with the beef.
  • Add the remaining tablespoon of oil to the wok. Sauté the onions and carrots until softened, about 3 to 4 minutes.
  • Stir in the peas and cooked rice, breaking up any clumps of rice with a spatula.
  • Pour the BBQ sauce and soy sauce over the rice, tossing constantly to ensure an even coating.
  • Return the cooked chicken and crispy beef bits to the wok. Toss everything together for another 2 minutes until fully heated through.
  • Garnish with sliced scallions and serve immediately.
