In a large baking dish, place the Boursin cheese in the center. Surround it with the cherry tomatoes, broccoli florets, and sliced red onion.
Drizzle the vegetables with olive oil and sprinkle with dried Italian herbs, salt, and black pepper.
Bake for 25 to 30 minutes until the tomatoes burst and the broccoli is tender and lightly charred.
While the vegetables bake, boil a pot of salted water and cook the penne pasta according to package directions until al dente. Reserve half a cup of pasta water, then drain the pasta.
Remove the baking dish from the oven. Mash the baked Boursin cheese and mix it with the roasted vegetables and their juices to form a creamy sauce.
Add the cooked penne pasta to the baking dish and toss well to combine. Add splashes of reserved pasta water as needed to thin the sauce. Serve hot.
