Creamy Baked Boursin Cheese Pasta with Vegetables

Ingredients
  

  • 5.2 oz Boursin cheese, Garlic & Fine Herbs One standard package
  • 2 cups Cherry tomatoes Washed and dried
  • 2 cups Broccoli florets Cut into bite-sized pieces
  • 1 medium Red onion Sliced
  • 3 tbsp Olive oil Extra virgin
  • 8 oz Penne pasta Or any short pasta of choice
  • 1 tsp Dried Italian herbs For seasoning
  • 0.5 tsp Salt Adjust to taste
  • 0.25 tsp Black pepper Freshly ground

Instructions
 

  • Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  • In a large baking dish, place the Boursin cheese in the center. Surround it with the cherry tomatoes, broccoli florets, and sliced red onion.
  • Drizzle the vegetables with olive oil and sprinkle with dried Italian herbs, salt, and black pepper.
  • Bake for 25 to 30 minutes until the tomatoes burst and the broccoli is tender and lightly charred.
  • While the vegetables bake, boil a pot of salted water and cook the penne pasta according to package directions until al dente. Reserve half a cup of pasta water, then drain the pasta.
  • Remove the baking dish from the oven. Mash the baked Boursin cheese and mix it with the roasted vegetables and their juices to form a creamy sauce.
  • Add the cooked penne pasta to the baking dish and toss well to combine. Add splashes of reserved pasta water as needed to thin the sauce. Serve hot.
