Creamy Baked Seafood and Rice Casserole

Ingredients
  

  • 3 cups Sushi Rice cooked
  • 2 tbsp Rice Vinegar for seasoning rice
  • 16 oz Salmon cooked and flaked
  • 8 oz Imitation Crab shredded
  • 8 oz Cream Cheese softened
  • 0.5 cup Spicy Mayonnaise store-bought or homemade
  • 1 tbsp Sriracha optional for extra heat
  • 3 tbsp Furikake or Sesame Seeds black and white blend
  • 0.25 cup Green Onions sliced

Instructions
 

  • Preheat the oven to 375 degrees Fahrenheit and grease a 9x13 inch baking dish.
  • In a large bowl, gently fold the cooked sushi rice with rice vinegar, then press the rice evenly into the bottom of the prepared baking dish.
  • Sprinkle half of the furikake or sesame seeds evenly over the pressed rice layer.
  • In a separate bowl, mix the cooked flaked fish, shredded imitation crab, softened cream cheese, spicy mayonnaise, and Sriracha until well combined.
  • Spread the creamy seafood mixture evenly over the rice layer in the baking dish.
  • Bake for 15 minutes until the top is bubbly and lightly golden.
  • Garnish with remaining sesame seeds and sliced green onions before serving warm with roasted seaweed sheets.
