Creamy Tuscan Chicken Pasta Recipe (30-Minute Skillet)

Creamy Chicken and Spinach Skillet Pasta

Ingredients
  

  • 16 oz Pasta penne or fettuccine preferred
  • 1 lb Chicken breast boneless, skinless, sliced into strips
  • 2 tbsp Olive oil preferably oil from the sun-dried tomato jar
  • 3 cloves Garlic minced
  • 1/2 cup Sun-dried tomatoes drained and chopped
  • 1 cup Chicken broth low sodium
  • 1 cup Heavy cream room temperature
  • 2 cups Fresh baby spinach lightly packed
  • 1/2 cup Parmesan cheese freshly grated
  • 1/2 tsp Black pepper freshly cracked

Instructions
 

  • Boil pasta according to package directions in salted water. Drain and set aside.
  • Heat olive oil in a large skillet over medium-high heat. Add sliced chicken breast and cook for 5-7 minutes until golden brown and cooked through. Remove chicken and set aside.
  • Lower heat to medium. Add minced garlic and sun-dried tomatoes to the skillet, cooking for 1 minute until fragrant.
  • Pour in chicken broth and heavy cream. Bring to a gentle simmer, scraping up any browned bits from the bottom of the pan.
  • Stir in fresh baby spinach, parmesan cheese, and black pepper. Simmer for 2-3 minutes until the spinach wilts and the sauce thickens.
  • Return the cooked chicken and cooked pasta to the skillet. Toss well to coat everything in the creamy sauce. Serve immediately.
