1/2cupSun-dried tomatoesdrained and chopped
1cupChicken brothlow sodium
1cupHeavy creamroom temperature
2cupsFresh baby spinachlightly packed
1/2cupParmesan cheesefreshly grated
1/2tspBlack pepperfreshly cracked
Instructions
Boil pasta according to package directions in salted water. Drain and set aside.
Heat olive oil in a large skillet over medium-high heat. Add sliced chicken breast and cook for 5-7 minutes until golden brown and cooked through. Remove chicken and set aside.
Lower heat to medium. Add minced garlic and sun-dried tomatoes to the skillet, cooking for 1 minute until fragrant.
Pour in chicken broth and heavy cream. Bring to a gentle simmer, scraping up any browned bits from the bottom of the pan.
Stir in fresh baby spinach, parmesan cheese, and black pepper. Simmer for 2-3 minutes until the spinach wilts and the sauce thickens.
Return the cooked chicken and cooked pasta to the skillet. Toss well to coat everything in the creamy sauce. Serve immediately.
