Creamy Chicken Tortilla Soup

Ingredients
  

  • 1 tbsp olive oil
  • 1/2 cup onion
  • 2 cloves garlic
  • 4 cups chicken broth
  • 15 oz black beans
  • 1 cup corn
  • 10 oz diced tomatoes with green chiles
  • 2 tbsp taco seasoning
  • 8 oz cream cheese
  • 1 cup cheddar cheese
  • 3 cups shredded cooked chicken
  • 1/4 cup fresh cilantro

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add diced onion and garlic, cooking until translucent (about 5 minutes).
  • Pour in the chicken broth, diced tomatoes with green chiles, black beans, corn, and taco seasoning. Bring to a gentle boil.
  • Reduce the heat to low. Stir in the softened cream cheese and shredded cheddar cheese until completely melted and the broth is smooth.
  • Add the shredded cooked chicken and simmer for 10-15 minutes to allow the flavors to combine.
  • Remove from heat and stir in the fresh chopped cilantro just before serving. Garnish with tortilla strips if desired.
