Instructions
Add 1 cup Greek yogurt, 2 tbsp chopped chipotle peppers, 1 tbsp adobo sauce, 2 tbsp lime juice, 0.5 tsp garlic powder, and 0.25 tsp salt to a food processor or blender.
Blend until completely smooth and creamy, which should take about 30 to 60 seconds.
Taste the mixture and adjust the seasoning. Add more adobo sauce for extra heat or salt to taste if needed.
Transfer the mixture to an airtight container and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
Peel and cut 2 lbs of sweet potatoes into matchsticks. Heat 4 cups of frying oil to 375 degrees Fahrenheit.
Fry the sweet potatoes in batches until crispy. Drain on paper towels, salt immediately, and serve hot alongside a lime wedge and the chilled dipping sauce.
