Instructions
Grate the English cucumber using a box grater. Wrap the grated cucumber in a clean kitchen towel or cheesecloth and squeeze out as much excess liquid as possible to prevent a watery dip.
In a medium mixing bowl, add the Greek yogurt, squeezed cucumber, fresh dill, fresh chives, lemon juice, extra virgin olive oil, minced garlic, and salt.
Stir all the ingredients together until they are thoroughly combined and the dip is smooth and creamy.
Taste the dip and add additional salt or lemon juice if desired. Cover the bowl and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
