Creamy Dill Cucumber Yogurt Dip

Ingredients
  

  • 1 cup plain Greek yogurt full-fat preferred
  • 1/2 cup English cucumber grated and excess moisture squeezed out
  • 2 tbsp fresh dill finely chopped
  • 1 tbsp fresh chives finely chopped
  • 1 tbsp fresh lemon juice freshly squeezed
  • 1 tbsp extra virgin olive oil
  • 1 clove garlic minced
  • 1/2 tsp kosher salt

Instructions
 

  • Grate the English cucumber using a box grater. Wrap the grated cucumber in a clean kitchen towel or cheesecloth and squeeze out as much excess liquid as possible to prevent a watery dip.
  • In a medium mixing bowl, add the Greek yogurt, squeezed cucumber, fresh dill, fresh chives, lemon juice, extra virgin olive oil, minced garlic, and salt.
  • Stir all the ingredients together until they are thoroughly combined and the dip is smooth and creamy.
  • Taste the dip and add additional salt or lemon juice if desired. Cover the bowl and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
