Ingredients

  • 2 lbs Chicken breasts, boneless skinless pounded to even thickness
  • 2 tbsp Olive oil
  • 1/2 cup Shallots finely chopped
  • 3 cloves Garlic minced
  • 3/4 cup Chicken broth low sodium
  • 5.2 oz Boursin cheese Garlic & Fine Herbs flavor
  • 1/2 tsp Black pepper freshly ground
  • 2 tbsp Fresh parsley chopped, for garnish

Instructions

  • Season the chicken breasts generously with salt and black pepper on both sides.
  • Heat olive oil in a large skillet over medium-high heat. Add the chicken and pan-sear for 6-7 minutes per side until golden brown and cooked through to 165F. Remove chicken and set aside.
  • Reduce heat to medium. Add chopped shallots to the skillet and sauté for 2-3 minutes until softened. Stir in the minced garlic and cook for 30 seconds.
  • Pour in the chicken broth to deglaze the pan, scraping up any browned bits from the bottom. Let it simmer for 2 minutes to reduce slightly.
  • Add the round of herb and garlic cheese to the skillet. Whisk gently until the cheese completely melts into a smooth, creamy sauce.
  • Return the seared chicken to the skillet, spooning the sauce over the meat. Simmer for 1-2 minutes until warmed through. Garnish with fresh parsley before serving.
