Instructions
Season the chicken breasts generously with salt and black pepper on both sides.
Heat olive oil in a large skillet over medium-high heat. Add the chicken and pan-sear for 6-7 minutes per side until golden brown and cooked through to 165F. Remove chicken and set aside.
Pour in the chicken broth to deglaze the pan, scraping up any browned bits from the bottom. Let it simmer for 2 minutes to reduce slightly.
Add the round of herb and garlic cheese to the skillet. Whisk gently until the cheese completely melts into a smooth, creamy sauce.
Return the seared chicken to the skillet, spooning the sauce over the meat. Simmer for 1-2 minutes until warmed through. Garnish with fresh parsley before serving.
