Creamy Slow Cooker Cajun Butter Chicken

Ingredients
  

  • 2 lbs Chicken breasts boneless, skinless
  • 2 tbsp Cajun seasoning
  • 1/2 cup Butter unsalted, cubed
  • 8 oz Cream cheese softened
  • 1/2 cup Chicken broth
  • 1 tbsp Garlic minced
  • 1/4 cup Heavy cream
  • 2 tbsp Fresh parsley chopped, for garnish

Instructions
 

  • Place the chicken breasts in the bottom of the slow cooker.
  • Sprinkle the Cajun seasoning evenly over the chicken.
  • Pour the chicken broth around the chicken. Scatter the minced garlic and cubed butter on top.
  • Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours, until the chicken is tender and reaches an internal temperature of 165°F.
  • About 30 minutes before serving, cut the cream cheese into chunks and add it to the slow cooker along with the heavy cream.
  • Shred the chicken using two forks directly in the pot. Stir well to blend the melted cream cheese and heavy cream into a smooth sauce.
  • Garnish with chopped fresh parsley and serve hot over rice or with crusty bread.
