Creamy Slow Cooker Cajun Butter Chicken

Ingredients
  

  • 2 lbs Chicken breasts Boneless, skinless
  • 2 tbsp Cajun seasoning Use a low-sodium brand if preferred
  • 1/2 cup Unsalted butter Sliced into pats
  • 1/2 cup Chicken broth Low sodium
  • 1 tbsp Minced garlic Freshly minced
  • 1/2 cup Heavy cream Room temperature
  • 8 oz Cream cheese Cubed and softened

Instructions
 

  • Place the chicken breasts in the bottom of the slow cooker.
  • Sprinkle the Cajun seasoning evenly over the meat.
  • Add the minced garlic, chicken broth, and sliced unsalted butter on top of the seasoned meat.
  • Cover and cook on LOW for 4 to 5 hours or HIGH for 2 to 3 hours, until the meat is tender and easily shreddable.
  • Remove the meat, shred it with two forks, and return it to the slow cooker.
  • Stir in the heavy cream and cubed cream cheese. Cover and cook on HIGH for an additional 30 minutes until the sauce is smooth and creamy.
  • Serve hot over steamed white rice or with warm crusty bread.
