Instructions
Place the chicken breasts at the bottom of the slow cooker.
Pour in the chicken broth. Add the sun-dried tomatoes, minced garlic, oregano, and red pepper flakes over the chicken.
Cover and cook on LOW for 4 to 5 hours, or HIGH for 2.5 to 3 hours, until the chicken is tender and reaches an internal temperature of 165°F.
Remove the chicken to a cutting board and slice or roughly shred it.
Stir the heavy cream and grated Parmesan cheese into the warm liquids remaining in the slow cooker until smooth.
Return the chicken to the pot, cover, and let cook for an additional 15 minutes to allow the sauce to thicken slightly.
Garnish with chopped fresh parsley before serving warm.
