Creamy Slow Cooker Sun-Dried Tomato Chicken

Ingredients
  

  • 1.5 lbs Chicken breasts (boneless, skinless) Patted dry
  • 1/2 cup Chicken broth Low sodium preferred
  • 1/2 cup Sun-dried tomatoes Drained and chopped
  • 3 cloves Garlic cloves Minced
  • 1 tsp Dried oregano
  • 1/2 tsp Red pepper flakes Adjust for spice preference
  • 3/4 cup Heavy cream Do not substitute with milk
  • 1/2 cup Parmesan cheese Freshly grated
  • 2 tbsp Fresh parsley Chopped for garnish

Instructions
 

  • Place the chicken breasts at the bottom of the slow cooker.
  • Pour in the chicken broth. Add the sun-dried tomatoes, minced garlic, oregano, and red pepper flakes over the chicken.
  • Cover and cook on LOW for 4 to 5 hours, or HIGH for 2.5 to 3 hours, until the chicken is tender and reaches an internal temperature of 165°F.
  • Remove the chicken to a cutting board and slice or roughly shred it.
  • Stir the heavy cream and grated Parmesan cheese into the warm liquids remaining in the slow cooker until smooth.
  • Return the chicken to the pot, cover, and let cook for an additional 15 minutes to allow the sauce to thicken slightly.
  • Garnish with chopped fresh parsley before serving warm.
