Creamy Southwestern Barbecue Poultry Bowl

Ingredients
  

  • 16 oz fusilli pasta uncooked
  • 2 cups grilled chicken breast diced
  • 15 oz black beans rinsed and drained
  • 1 cup sweet corn canned or fresh
  • 1 cup cheddar cheese shredded
  • 0.25 cup fresh cilantro chopped
  • 0.5 cup BBQ sauce use your favorite brand
  • 0.25 cup mayonnaise can use light mayo
  • 0.25 cup plain Greek yogurt adds extra protein

Instructions
 

  • Boil fusilli pasta according to package directions, drain, and let cool completely.
  • In a small bowl, whisk together BBQ sauce, mayonnaise, and plain Greek yogurt to make the dressing.
  • In a large bowl, toss the cooled pasta with diced grilled poultry, sweet corn, black beans, cheddar cheese, and fresh cilantro.
  • Pour the dressing over the ingredients, toss until evenly coated, and chill in the refrigerator before serving.
