Creamy Tri-Color Cold Noodle Bowl

Ingredients
  

  • 16 oz tri-color rotini pasta dry
  • 2 cups broccoli florets cut into bite-sized pieces
  • 1 cup diced cucumber peeled or unpeeled based on preference
  • 1 cup diced red bell pepper seeds removed
  • 1 cup creamy ranch dressing store-bought or homemade
  • 2 tbsp fresh dill chopped finely
  • 1/2 tsp black pepper freshly ground

Instructions
 

  • Boil a large pot of salted water. Cook the tri-color rotini according to package directions. Drain and rinse under cold water to stop the cooking process.
  • In a large mixing bowl, combine the cooled pasta, broccoli florets, diced cucumber, and diced red bell pepper.
  • Pour the creamy ranch dressing over the pasta and vegetables. Sprinkle with fresh herbs and black pepper.
  • Toss all ingredients gently until thoroughly coated.
  • Cover and chill in the refrigerator for at least 1 hour before serving to let the flavors meld.
