Instructions
Season the chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat.
Sear the chicken for 5-7 minutes per side until golden brown and cooked through. Remove and set aside.
In the same skillet, melt butter over medium heat. Add diced onions and cook until soft, about 3 minutes. Stir in minced garlic and cook for 30 seconds until fragrant.
Stir in diced tomatoes and heavy cream. Bring to a gentle simmer and let thicken for 2-3 minutes.
Add the fresh spinach and grated Parmesan cheese. Stir continuously until the spinach wilts and the cheese melts into a smooth sauce.
Return the cooked chicken to the skillet, spooning the sauce over the top. Simmer for 2 minutes to heat through. Garnish with fresh herbs and serve.
