Butternut squash, peeled, seeded, and cubed
Cut into 1-inch cubes

Instructions
Peel, seed, and cut the squash into 1-inch cubes.
Place the cubes in a large pot, cover with water, and bring to a boil. Cook for 15 to 20 minutes until fork-tender.
Drain the water thoroughly and return the squash to the warm pot off the heat to evaporate excess moisture.
Add the butter, cinnamon, nutmeg, salt, and black pepper. Mash until smooth.
Fold in the chopped chives and serve hot.
