Ingredients
  

  • 3 lbs Butternut squash, peeled, seeded, and cubed Cut into 1-inch cubes
  • 4 tbsp Unsalted butter Room temperature
  • 2 tbsp Fresh chives Finely chopped
  • 1/2 tsp Ground cinnamon
  • 1/4 tsp Ground nutmeg
  • 1 tsp Kosher salt
  • 1/2 tsp Black pepper Freshly ground

Instructions
 

  • Peel, seed, and cut the squash into 1-inch cubes.
  • Place the cubes in a large pot, cover with water, and bring to a boil. Cook for 15 to 20 minutes until fork-tender.
  • Drain the water thoroughly and return the squash to the warm pot off the heat to evaporate excess moisture.
  • Add the butter, cinnamon, nutmeg, salt, and black pepper. Mash until smooth.
  • Fold in the chopped chives and serve hot.
