Preheat your oven to 400 degrees F and line a large baking sheet with parchment paper.
In a medium bowl, mix the crumbled 16 oz feta and 4 oz softened cream cheese until well combined.
Unroll the 1 package of phyllo dough. Place one sheet on a clean surface and brush lightly with some of the 0.5 cup melted butter. Fold in half lengthwise and brush again.
Place a heaping tablespoon of the feta mixture at one end of the folded dough. Fold the sides inward and roll up tightly.
Place the rolls seam-side down on the prepared baking sheet. Brush the tops with the remaining melted butter.
Bake for 15 to 18 minutes, or until the pastry is golden brown and crispy.
While the rolls bake, combine the 0.5 cup honey and 1 tbsp red pepper flakes in a small saucepan over low heat. Simmer for 5 minutes, then remove from heat.
Drizzle the warm spicy honey over the freshly baked rolls and garnish with 1 tbsp fresh thyme before serving.
