Crispy Garlic Parmesan Roasted Potatoes

Ingredients
  

  • 1.5 lbs baby potatoes halved or quartered
  • 3 tbsp olive oil
  • 3 cloves garlic minced
  • 1/2 cup Parmesan cheese freshly grated
  • 1/2 tsp paprika
  • 1/2 tsp salt or to taste
  • 1/4 tsp black pepper freshly ground
  • 1 tbsp fresh parsley chopped, for garnish

Instructions
 

  • Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  • Wash and dry the potatoes thoroughly. Cut them into halves (or quarters if they are large).
  • In a small bowl, whisk together the olive oil, minced garlic, paprika, salt, and black pepper.
  • Place the potatoes in a large mixing bowl and pour the oil mixture over them. Toss well until every potato is evenly coated.
  • Add the grated Parmesan cheese to the bowl and toss again until the cheese clings to the potatoes.
  • Arrange the potatoes on the prepared baking sheet in a single layer, placing them cut-side down to ensure a crispy crust.
  • Roast in the preheated oven for 30 to 35 minutes, or until the potatoes are tender and golden brown.
  • Remove from the oven and let them rest on the pan for 5 minutes to allow the cheese crust to set.
  • Transfer to a serving dish, garnish with fresh parsley, and serve immediately.
