Roast in the preheated oven for 30 to 35 minutes, or until the potatoes are tender and golden brown.
Remove from the oven and let them rest on the pan for 5 minutes to allow the cheese crust to set.
Transfer to a serving dish, garnish with fresh parsley, and serve immediately.
