Crispy Lemon Garlic Roasted Potatoes

Ingredients
  

  • 2 lbs Yukon Gold potatoes cut into 1-inch cubes
  • 3 tbsp Olive oil extra virgin
  • 4 cloves Garlic minced
  • 1 tbsp Lemon zest freshly grated
  • 2 tbsp Lemon juice freshly squeezed
  • 1 tbsp Fresh thyme chopped
  • 1 tsp Salt kosher or sea salt
  • 1/2 tsp Black pepper freshly cracked

Instructions
 

  • Preheat the oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  • Wash, dry, and cut the potatoes into uniform 1-inch cubes to ensure even cooking.
  • In a large mixing bowl, toss the cubed potatoes with olive oil, minced garlic, lemon zest, thyme, salt, and black pepper until evenly coated.
  • Spread the seasoned potatoes in a single, even layer on the prepared baking sheet, ensuring they are not touching.
  • Roast in the preheated oven for 35 to 40 minutes, tossing halfway through, until the potatoes are tender on the inside and crispy and golden on the edges.
  • Remove from the oven and immediately toss the hot potatoes with the fresh lemon juice.
  • Serve hot, garnished with extra fresh thyme and lemon wedges if desired.
