Ingredients
  

  • 1 lb Carrots peeled and sliced diagonally
  • 2 tbsp Olive oil extra virgin
  • 1 tsp Ground cumin
  • 1/2 tsp Garlic powder
  • 1/2 tsp Kosher salt
  • 1/4 tsp Black pepper freshly cracked
  • 1 tbsp Fresh parsley chopped, for garnish

Instructions
 

  • Preheat the oven to 400F (200C) and line a large baking sheet with parchment paper.
  • Wash, peel, and slice the carrots diagonally into even pieces.
  • In a large mixing bowl, toss the sliced carrots with olive oil, ground cumin, garlic powder, kosher salt, and black pepper until well coated.
  • Spread the carrots in a single layer on the prepared baking sheet, ensuring they do not overlap.
  • Roast in the preheated oven for 20 to 25 minutes, flipping the carrots halfway through, until they are fork-tender and the edges are crispy.
  • Remove from the oven, garnish with fresh parsley, and serve immediately.
