Instructions
Place the cubed beef and halved baby potatoes into the bottom of a 6-quart slow cooker.
In a small bowl, whisk together the melted butter, minced garlic, beef broth, Italian seasoning, salt, and black pepper.
Pour the garlic butter mixture evenly over the beef and potatoes. Toss gently to coat all the ingredients.
Cover and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours, until the meat is tender and the potatoes are fork-tender.
Garnish with chopped fresh parsley before serving warm.
