Crockpot Garlic Butter Steak Bites and Potatoes

Ingredients
  

  • 2 lbs Beef chuck roast cut into 1-inch cubes
  • 1.5 lbs Baby potatoes halved
  • 0.5 cup Unsalted butter melted
  • 4 cloves Garlic minced
  • 0.5 cup Beef broth low sodium
  • 1 tbsp Italian seasoning
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Fresh parsley chopped for garnish

Instructions
 

  • Place the cubed beef and halved baby potatoes into the bottom of a 6-quart slow cooker.
  • In a small bowl, whisk together the melted butter, minced garlic, beef broth, Italian seasoning, salt, and black pepper.
  • Pour the garlic butter mixture evenly over the beef and potatoes. Toss gently to coat all the ingredients.
  • Cover and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours, until the meat is tender and the potatoes are fork-tender.
  • Garnish with chopped fresh parsley before serving warm.
