Place the chicken breasts in the bottom of the crockpot.
In a small bowl, whisk together the honey, soy sauce, minced garlic, and rice vinegar. Pour this sauce over the poultry.
Cover and cook on LOW for 3 to 4 hours, or until the meat is cooked through and registers 165F internally.
Remove the meat from the pot and shred it or cut it into bite-sized chunks.
Transfer the remaining liquid from the pot into a saucepan. Stir in the cornstarch slurry and simmer over medium heat for 3 minutes until the glaze thickens.
Toss the meat back into the thickened glaze. Garnish with chopped green onions and sesame seeds. Serve hot over cooked white rice with steamed green beans on the side.
