Crockpot Sweet and Savory Garlic Chicken

Ingredients
  

  • 1.5 lbs chicken breasts boneless, skinless
  • 0.5 cup honey raw or standard
  • 0.5 cup soy sauce low sodium
  • 4 cloves garlic minced
  • 1 tbsp rice vinegar
  • 1 tbsp cornstarch mixed with 1 tbsp water
  • 0.25 cup green onions chopped
  • 1 tbsp sesame seeds toasted
  • 2 cups white rice cooked
  • 2 cups green beans steamed

Instructions
 

  • Place the chicken breasts in the bottom of the crockpot.
  • In a small bowl, whisk together the honey, soy sauce, minced garlic, and rice vinegar. Pour this sauce over the poultry.
  • Cover and cook on LOW for 3 to 4 hours, or until the meat is cooked through and registers 165F internally.
  • Remove the meat from the pot and shred it or cut it into bite-sized chunks.
  • Transfer the remaining liquid from the pot into a saucepan. Stir in the cornstarch slurry and simmer over medium heat for 3 minutes until the glaze thickens.
  • Toss the meat back into the thickened glaze. Garnish with chopped green onions and sesame seeds. Serve hot over cooked white rice with steamed green beans on the side.
