white beans
rinsed and drained

vegetable broth

leafy greens
spinach or kale, roughly chopped

dried thyme

Instructions
Heat olive oil in a large pot over medium heat. Add the diced onion, carrots, and celery, and sauté for 5 minutes until softened.
Stir in the minced garlic and quartered radishes. Cook for an additional 2 to 3 minutes.
Pour in the vegetable broth and add the rinsed white beans, dried thyme, salt, and pepper. Bring the soup to a gentle boil.
Reduce the heat to low, cover the pot, and let the soup simmer for 15 to 20 minutes until the radishes and carrots are fork-tender.
Stir in the leafy greens and simmer for another 2 to 3 minutes until they are completely wilted. Serve hot.
