Delicious Radish Veggie Soup

Ingredients
  

  • 1 tbsp olive oil
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 2 medium carrots sliced
  • 2 stalks celery sliced
  • 1 bunch radishes trimmed and quartered
  • 1 can (15 oz) white beans rinsed and drained
  • 4 cups vegetable broth
  • 2 cups leafy greens spinach or kale, roughly chopped
  • 1 tsp dried thyme
  • to taste Salt and pepper

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add the diced onion, carrots, and celery, and sauté for 5 minutes until softened.
  • Stir in the minced garlic and quartered radishes. Cook for an additional 2 to 3 minutes.
  • Pour in the vegetable broth and add the rinsed white beans, dried thyme, salt, and pepper. Bring the soup to a gentle boil.
  • Reduce the heat to low, cover the pot, and let the soup simmer for 15 to 20 minutes until the radishes and carrots are fork-tender.
  • Stir in the leafy greens and simmer for another 2 to 3 minutes until they are completely wilted. Serve hot.
