Place the empanada pastry discs flat on the prepared baking sheet.
Spoon approximately two tablespoons of the ground beef mixture into the center of each pastry disc. Spread the meat out evenly, leaving a small half-inch border around the edges.
Pinch the edges of the pastry in four opposite corners to create a square, boat-like shape that holds the meat in the center.
Bake in the preheated oven for 15 to 18 minutes, or until the pastry is golden brown and the ground beef is fully cooked.
Remove from the oven and let cool slightly before serving warm alongside the creamy herb dipping sauce.
