Ingredients
  

  • 2 tbsp Ground turmeric
  • 2 tbsp Paprika powder
  • 2 tbsp Cumin powder
  • 2 tbsp Coriander powder
  • 1 tsp Ground cinnamon
  • 2 whole Star anise
  • 1 whole Cinnamon stick
  • 3 whole Bay leaves dried
  • 1 tbsp Black peppercorns
  • 2 whole Dried red chilies
  • 1 tbsp Dried garlic flakes can substitute dehydrated garlic cloves
  • 1 tbsp Mixed ground spices allspice or nutmeg blend

Instructions
 

  • Place the star anise, cinnamon stick, bay leaves, black peppercorns, dried red chilies, and dried garlic flakes in a dry skillet over medium-low heat. Toast for 3-5 minutes, stirring frequently, until fragrant. Remove from heat and let cool completely.
  • Transfer the cooled, toasted aromatics to a dedicated grinder or mortar and pestle. Process until it forms a fine powder.
  • In a mixing bowl, whisk together the freshly ground powder with the ground turmeric, paprika powder, cumin powder, coriander powder, ground cinnamon, and mixed ground spices.
  • Transfer the finished mixture into an airtight glass jar and store in a cool, dark pantry for up to 6 months.
