Instructions
Place the rinsed black beans, sweet corn kernels, halved cherry tomatoes, finely chopped red onion, and fresh cilantro into a large mixing bowl.
In a small separate bowl, whisk together the freshly squeezed lime juice, olive oil, ground cumin, kosher salt, and black pepper to form the dressing.
Pour the lime dressing over the bean and corn mixture, tossing everything gently until the ingredients are evenly coated.
Cover the bowl and chill in the refrigerator for at least 30 minutes to allow the flavors to develop fully before serving.
