Fresh Black Bean and Corn Salsa

Ingredients
  

  • 15 oz black beans canned, rinsed and drained
  • 1.5 cups sweet corn kernels thawed if frozen, or fresh
  • 1 cup cherry tomatoes halved
  • 1/2 cup red onion finely chopped
  • 1/2 cup fresh cilantro chopped
  • 2 tbsp lime juice freshly squeezed
  • 1 tbsp olive oil extra virgin
  • 1/2 tsp ground cumin
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper

Instructions
 

  • Place the rinsed black beans, sweet corn kernels, halved cherry tomatoes, finely chopped red onion, and fresh cilantro into a large mixing bowl.
  • In a small separate bowl, whisk together the freshly squeezed lime juice, olive oil, ground cumin, kosher salt, and black pepper to form the dressing.
  • Pour the lime dressing over the bean and corn mixture, tossing everything gently until the ingredients are evenly coated.
  • Cover the bowl and chill in the refrigerator for at least 30 minutes to allow the flavors to develop fully before serving.
