Fresh Chopped Summer Veggie Toss

Ingredients
  

  • 2 cups English cucumbers chopped
  • 2 cups cherry tomatoes halved
  • 0.5 cup red onion diced
  • 2 tbsp fresh dill chopped
  • 1 tbsp olive oil extra virgin
  • 1 tbsp red wine vinegar
  • 0.5 tsp black pepper freshly ground
  • 0.5 tsp kosher salt

Instructions
 

  • 1. Prep the vegetables: Chop cucumbers and halve tomatoes. Dice the red onion finely.
  • 2. Combine the base: Add cucumbers, tomatoes, red onion, and fresh dill to a large mixing bowl.
  • 3. Dress the salad: Drizzle olive oil and red wine vinegar over the vegetables. Add salt and black pepper.
  • 4. Toss and rest: Gently mix everything together until coated. Let it rest in the refrigerator for 15 minutes before serving.
