sweet corn
fresh, canned, or thawed frozen

large avocados
diced

cherry tomatoes
quartered

cup
red onion
finely chopped

fresh cilantro
chopped

lime juice
freshly squeezed

jalapeno
finely diced, seeds removed

to taste
Instructions
In a large bowl, combine the sweet corn, diced avocados, quartered cherry tomatoes, chopped red onion, cilantro, and diced jalapeno.
Drizzle the fresh lime juice evenly over the salad mixture and sprinkle with salt.
Gently toss all the ingredients together until well combined, being careful not to mash the avocados.
Taste and adjust the seasoning with more salt or lime juice if desired.
Serve immediately with tortilla chips, or use as a topping for tacos, grilled chicken, or fish.
