Fresh Corn Avocado Salsa

Ingredients
  

  • 2 cups sweet corn fresh, canned, or thawed frozen
  • 2 large avocados diced
  • 1 cup cherry tomatoes quartered
  • 1/2 cup red onion finely chopped
  • 1/4 cup fresh cilantro chopped
  • 2 tbsp lime juice freshly squeezed
  • 1 jalapeno finely diced, seeds removed
  • 1/2 tsp salt to taste

Instructions
 

  • In a large bowl, combine the sweet corn, diced avocados, quartered cherry tomatoes, chopped red onion, cilantro, and diced jalapeno.
  • Drizzle the fresh lime juice evenly over the salad mixture and sprinkle with salt.
  • Gently toss all the ingredients together until well combined, being careful not to mash the avocados.
  • Taste and adjust the seasoning with more salt or lime juice if desired.
  • Serve immediately with tortilla chips, or use as a topping for tacos, grilled chicken, or fish.
