In a small jar or bowl, whisk together the olive oil, lime juice, honey, Dijon mustard, salt, and black pepper until completely smooth and emulsified.
In a large mixing bowl, combine the corn kernels, halved cherry tomatoes, diced cucumber, diced green bell pepper, finely chopped red onion, and chopped fresh parsley.
Pour the prepared dressing over the vegetable mixture.
Toss well until all ingredients are evenly coated with the dressing.
Cover and refrigerate for at least 30 minutes before serving to allow the flavors to develop. Toss again right before serving.
