Fresh Summer Sweetcorn Toss

Ingredients
  

  • 4 cup, fresh, frozen, or canned (drained) Corn kernels
  • 1 cup, halved Cherry tomatoes
  • 1 cup, diced English cucumber
  • 1/2 cup, diced Green bell pepper
  • 1/4 cup, finely chopped Red onion
  • 1/4 cup, finely chopped Fresh parsley
  • 3 tbsp Extra virgin olive oil
  • 2 tbsp, freshly squeezed Lime juice
  • 1 tbsp Honey
  • 1 tsp Dijon mustard
  • 1/2 tsp Kosher salt
  • 1/4 tsp, freshly ground Black pepper

Instructions
 

  • In a small jar or bowl, whisk together the olive oil, lime juice, honey, Dijon mustard, salt, and black pepper until completely smooth and emulsified.
  • In a large mixing bowl, combine the corn kernels, halved cherry tomatoes, diced cucumber, diced green bell pepper, finely chopped red onion, and chopped fresh parsley.
  • Pour the prepared dressing over the vegetable mixture.
  • Toss well until all ingredients are evenly coated with the dressing.
  • Cover and refrigerate for at least 30 minutes before serving to allow the flavors to develop. Toss again right before serving.
