Garlic and Herb Cheese Stuffed Chicken

Ingredients
  

  • 4 pieces boneless skinless chicken breasts butterflied
  • 4 oz cream cheese softened
  • 2 tbsp fresh chives minced
  • 2 tbsp fresh parsley chopped
  • 1 tsp garlic powder
  • 0.5 tsp salt divided
  • 0.25 tsp black pepper divided
  • 1 tbsp olive oil for searing
  • 1 tsp paprika for outside seasoning

Instructions
 

  • Preheat oven to 375 degrees Fahrenheit.
  • In a small bowl, mix the softened cream cheese, chives, parsley, garlic powder, half the salt, and half the pepper.
  • Slice a pocket into the side of each chicken breast, being careful not to cut completely through.
  • Spoon the cheese mixture evenly into the pockets of the breasts. Secure with toothpicks if necessary.
  • Season the outside of the meat with the remaining salt, pepper, and paprika.
  • Heat olive oil in an oven-safe skillet over medium-high heat. Sear the chicken for 3 to 4 minutes per side until golden brown.
  • Transfer the skillet to the preheated oven and bake for 15 to 20 minutes, or until the internal temperature reaches 165 degrees Fahrenheit.
