Garlic Herb Cheese Skillet Poultry

Ingredients
  

  • 1.5 lbs Chicken breasts (boneless, skinless) Pounded to even thickness
  • 1 tbsp Olive oil For searing
  • 0.5 cup Chicken broth Low sodium preferred
  • 5.2 oz Boursin cheese (Garlic & Fine Herbs) 1 standard wheel
  • 2 tbsp Fresh chives Chopped, for garnish

Instructions
 

  • Season the chicken breasts evenly with salt and black pepper on both sides.
  • Heat the olive oil in a large skillet over medium-high heat. Add the chicken breasts and sear for 5 to 7 minutes per side until golden brown and cooked through (reaching an internal temperature of 165F). Remove the chicken from the skillet and set aside on a plate.
  • Lower the heat to medium. Pour the chicken broth into the skillet, using a wooden spoon to scrape up any browned bits from the bottom of the pan.
  • Add the wheel of cheese to the skillet. Stir constantly until it melts completely into a smooth, even sauce.
  • Return the chicken to the skillet, spooning the sauce over the top to coat it thoroughly. Simmer for 1 to 2 minutes until everything is warmed through.
  • Garnish with chopped fresh chives and extra black pepper before serving.
