Instructions
Season the chicken breasts evenly with salt and black pepper on both sides.
Heat the olive oil in a large skillet over medium-high heat. Add the chicken breasts and sear for 5 to 7 minutes per side until golden brown and cooked through (reaching an internal temperature of 165F). Remove the chicken from the skillet and set aside on a plate.
Lower the heat to medium. Pour the chicken broth into the skillet, using a wooden spoon to scrape up any browned bits from the bottom of the pan.
Add the wheel of cheese to the skillet. Stir constantly until it melts completely into a smooth, even sauce.
Return the chicken to the skillet, spooning the sauce over the top to coat it thoroughly. Simmer for 1 to 2 minutes until everything is warmed through.
Garnish with chopped fresh chives and extra black pepper before serving.
