Glazed Poultry with Fresh Berries and Herbs

Ingredients
  

  • 4 item boneless, skinless chicken breasts 6 oz each
  • 2 tbsp olive oil divided
  • 3 tbsp balsamic vinegar
  • 2 cloves garlic minced
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 2 cups fresh strawberries hulled and diced
  • 1/2 cup fresh basil leaves thinly sliced
  • 1 tbsp honey optional glaze addition

Instructions
 

  • Place the 4 chicken breasts in a shallow dish. Whisk together 1 tbsp olive oil, 3 tbsp balsamic vinegar, 2 minced garlic cloves, 1/2 tsp kosher salt, and 1/2 tsp black pepper. Pour over the meat and marinate for 20 minutes.
  • Heat the remaining 1 tbsp olive oil in a large skillet over medium-high heat.
  • Cook the marinated breasts for 6 to 7 minutes per side until golden brown and the internal temperature reaches 165 F. Remove from the skillet and let rest.
  • In a small bowl, toss the 2 cups of diced strawberries and 1/2 cup of sliced fresh basil. If desired, drizzle with 1 tbsp honey.
  • Top the warm cooked chicken with the fresh berry and herb mixture before serving.
