Ingredients
  

  • 1 lb boneless skinless chicken breasts grilled and sliced
  • 8 count tortillas corn or flour
  • 1 cup mango peeled and diced
  • 1/2 cup red bell pepper diced
  • 1/2 cup green bell pepper diced
  • 1/4 cup red onion finely chopped
  • 1/4 cup fresh cilantro chopped
  • 1/2 cup crumbled cheese cotija or feta

Instructions
 

  • Preheat the grill to medium-high heat.
  • Season chicken breasts with your favorite spices, then grill for 6 to 8 minutes per side until fully cooked.
  • Mix the diced mango, red bell pepper, green bell pepper, red onion, and cilantro in a bowl to make the salsa.
  • Slice the grilled chicken and warm the tortillas.
  • Assemble the tacos by filling the tortillas with sliced chicken, mango salsa, and crumbled cheese.
