Grilled Chicken Veggie Skewers

Ingredients
  

  • 1 lb Boneless skinless chicken breasts Cut into 1-inch cubes
  • 1 medium Zucchini Sliced into thick half-moons
  • 1 medium Red bell pepper Cut into 1-inch chunks
  • 1 medium Yellow bell pepper Cut into 1-inch chunks
  • 1 medium Red onion Cut into 1-inch chunks
  • 2 tbsp Olive oil For brushing
  • 1 tsp Salt Adjust to taste
  • 1/2 tsp Black pepper Freshly ground
  • 2 tbsp Fresh parsley Chopped, for garnish

Instructions
 

  • Soak wooden skewers in water for at least 30 minutes before grilling to prevent them from burning.
  • Preheat your grill to medium-high heat, approximately 400 degrees Fahrenheit.
  • Thread the chicken pieces, zucchini, red bell pepper, yellow bell pepper, and red onion alternately onto the prepared skewers.
  • Lightly brush the assembled skewers with olive oil, then season evenly on all sides with salt and black pepper.
  • Place the skewers onto the hot grill and cook for 10 to 12 minutes, turning every 3 to 4 minutes to ensure even cooking.
  • Remove the skewers from the grill once the chicken reaches an internal temperature of 165 degrees Fahrenheit and the vegetables are tender.
  • Garnish with freshly chopped parsley before serving hot.
