Instructions
Soak wooden skewers in water for at least 30 minutes before grilling to prevent them from burning.
Preheat your grill to medium-high heat, approximately 400 degrees Fahrenheit.
Thread the chicken pieces, zucchini, red bell pepper, yellow bell pepper, and red onion alternately onto the prepared skewers.
Lightly brush the assembled skewers with olive oil, then season evenly on all sides with salt and black pepper.
Place the skewers onto the hot grill and cook for 10 to 12 minutes, turning every 3 to 4 minutes to ensure even cooking.
Remove the skewers from the grill once the chicken reaches an internal temperature of 165 degrees Fahrenheit and the vegetables are tender.
Garnish with freshly chopped parsley before serving hot.
