Grilled Lemon Herb Chicken Skewers

Ingredients
  

  • 2 lbs Boneless skinless chicken breasts cut into 1-inch cubes
  • 1/4 cup Olive oil
  • 3 tbsp Fresh lemon juice
  • 2 tsp Lemon zest
  • 3 cloves Garlic minced
  • 1 tbsp Fresh rosemary chopped
  • 1 tbsp Fresh thyme chopped
  • 1 tsp Salt
  • 1/2 tsp Black pepper

Instructions
 

  • In a large bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, chopped rosemary, thyme, salt, and black pepper to create the marinade.
  • Add the cubed chicken to the bowl with the marinade and toss to coat evenly. Cover and refrigerate for at least 30 minutes, or up to 2 hours for maximum flavor.
  • If using wooden skewers, soak them in water for at least 30 minutes prior to grilling to prevent them from burning.
  • Preheat your grill to medium-high heat.
  • Thread the marinated chicken cubes onto the skewers, leaving a small gap between each piece to ensure even cooking.
  • Place the skewers on the preheated grill. Cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and reaches an internal temperature of 165°F.
  • Remove the skewers from the grill and let them rest for 3-5 minutes before serving.
